Grandma’s Parsley Potatoes

Grandmas Parsley Potatoes

One of my personal favorites, Grandma’s parsley potatoes are fast to make and are a great side dish! It’s a great compliment to any meal seasoned with garlic.

Preparation time: 15 minutes
Cooking time: 20 minutes
Serves: 4 people

 

Ingredients:

  • 2 pound of red potatoes
  • 1/2 cup of chopped parsley
  • 4 tablespoons of lemon juice
  • 1/4 cup extra virgin olive oil (or milk)

Directions:

Fill dutch oven or large pot with potatoes and enough cold water to cover them (don’t over fill so the water boils over). Heat water to a boil. Stir occasionally. Boil for about 15 minutes or until potatoes are tender. Drain water and reduce to medium heat. Add chopped parsley, lemon juice and olive oil. Milk could be substituted for olive oil to make the potatoes creamier. Stir ingredients until evenly mixed. Serve hot.
